Eddie's Wonderful Potato Veg and Butter Marriage Enhancing pie.
Try this: 8 oz. plain flour. 2 oz butter with 2oz white lard. dash of salt. Use mixer or hands to rub together 'till crumbly. Drizzle in very cold water to bring crumble together to a loose pastry mix. Don't handle too much. Wrap in foil and put in fridge for over half an hour.
Have about three potatoes chopped up with a couple of onions. Add a bit of chopped up carrot if you like, plus a bit of celery. Cook in saucepan with just enough water to not quite cover. Add a dash of olive oil, blob of butter, dash of balsamic vinegar, salt and black pepper. When just about soft drain off water. Shake together. Mmmhhh.... Make a sauce with the veg. water by adding whatever thickening you have at hand.
Grease out a pie dish. Roll out a thin slab of pastry for bottom of dish - fill with the veg mixture. drop some blobs of butter over the top - then lay pastry lid over top. Paint with slightly whipped egg.
Cook at 195c for about 20 mins.
Praise the Lord for the inbuilt creativity we all have. God had made us with most amazing potential. No-one needs to be inadequate.

By the way - for a real gourmatic experience, slosh Brown sauce over the pie - maybe fry a good quality sausage to eat with it.
