This is a 'non-alcoholic' drink. Thought I'd better make that plain at the start. Well the fact is we have just had a terrific Carol Singing event outside Morrison's at Margate. It was organised by Margate Central Churches. The singing was up-market - the attendance was good and the response was positive. However - the Ginger Wine - aaahhh yes. This was served hot - or at least pretty warm, and to like it, you need to have a taste for Ginger! Ginger by the way is exceedingly good. It settles the tummy, warms the chest, and is the very thing to fight back a cold or even the flue. Folks liked this year's brew and quite a few asked me for the recipe. Dear friend, I have to tell you - it's no mystery. Please do try it.
OK - the big secret is an ancient basic recipe that our ancestors used to get made up by the local Apothecary (i.e. Chemist) Most country mums of years gone by would toddle off down the Village to the little Chemist shop and hand over that yellowing bit of paper with the Ginger Wine basic syrup recipe. The Chemist would go into his back room and in a while would come back with a small flask of this glorious dark liquid that would soon be be transformed into the reviving drink known as Ginger Wine. Well, what do we do these day when Chemists no longer make these age old recipes up to order?
Help is at hand! In the UK there is one Company from which we can buy the Basic Ginger Syrup in small 100ml bottles. RIDDLES up in Houghton-le-Springs.
It is sooo simple ... just heat up 5 pints of water - add 2 lbs of sugar. When the water had cooled and the sugar is dissolved, add the 100mls of Ginger Compound and stir well. That's it! However - now you can use your imagination and add what you think may spice it up a bit. It fine as it is, but I added a bottle of Sainsbury's Spicy Winter Cordial. You can also add some Cinnamon - I added about two full teaspoons which I boiled in a cup of water and filtered it into the mix.

This stuff has a bite to it.
By the way, its so good to get together like we did to sing and praise the Lord. Maybe at Easter we can do it again and give out Hot Cross Buns - and - mmmmmhhhhhhh - have you ever tried Coffee with Honey and Cinnamon - now that is an experience!
